Ingredients:

●        3–4 lbs venison bones (could use any wild game of domestic animal bones)

●        2 medium carrots, chopped

●        2 celery stalks, chopped

●        1 large onion, quartered

●        5 garlic cloves, smashed

●        2 tbsp apple cider vinegar

●        2 bay leaves

●        1 tbsp black peppercorns

●        2–3 sprigs fresh thyme

●        1 sprig fresh rosemary

●        1 tbsp salt (optional)

●        12 cups water

 
Instructions:

Roast the venison bones, carrots, onions, garlic and celery at 400°F (200°C) for 30–40 minutes to enhance the flavor, you want the char.
Place roasted bones in a large stockpot or slow cooker. Add carrots, celery, onion, garlic, apple cider vinegar, bay leaves, peppercorns, thyme, rosemary, and salt.
Pour in enough water to cover the bones and ingredients completely.
Bring the mixture to a gentle boil, then reduce the heat to a low simmer. For the stovetop, simmer for 12–24 hours, occasionally skimming off foam and fat. In a slow cooker, set to low and cook for the same duration.
Once the broth is rich and aromatic, strain it through a fine-mesh sieve or cheesecloth into a large container. Discard the solids.
Allow the broth to cool, then refrigerate. Remove the solidified fat from the top if desired. Store in the fridge for up to 5 days or freeze in portions for longer storage.
